These cabbage pancakes are inspired in a traditional Japanese food called Okonomiyaki. Okonomiyaki is a savory dish that is a bit more like an omelette or frittata than a pancake and it’s made with okonomiyaki flour, eggs, cabbage, pork (bacon), shrimp or other seafood, and topped with a variety of condiments like sweet sauce, mayonnaise, dried seaweed and dried fish flakes.
My 6 year old daughter helped me make them. She eats quite a few vegetables, but cabbage is not on the list. However, she loved these pancakes! So, I am glad I wrote down the recipe to be able to replicate it next time! 🙂
Cabbage is such a healthy vegetable! It’s very good source of dietary fiber, calcium, magnesium, and potassium. It is also rich in various vitamins including vitamin C, B6, A, K, and E. It is also high in antioxidants including flavonoid, zeaxanthin, lutein, choline, and beta-carotene. So, definitely a vegetable you want to make sure you are consuming often.

Cabbage Pancakes with Sriracha Mayo
Ingredients (8 pancakes)
- Cabbage (shredded), 4 cups
- Eggs, 3
- Water, 1/2 cup
- Coco aminos, 2 Tbsp
- Almond flour, 1 1/4 cup
- Green onions, 3 (sliced)
- Sweet potato (shredded), 1 cup
- Avocado oil, 3 Tbsps
- Salt, 1 tsp
- Ground black pepper, 1/4 tsp
- Butter, for cooking
- Avocado oil mayo, 1/4 cup
- Sriracha sauce, 2 Tbsp
In a big bowl mix the eggs, water, 1 tablespoon of oil, and coco aminos and almond flour.
In a nonstick skillet heat the remaining 2 tablespoon of olive oil over medium heat. Saute the cabbage, green onions and sweet potato for about 5 minutes.
Pour the vegetables into the bowl with the batter, season with the salt and pepper, and mix all together with a wooden spoon.
In a nonstick frying pan or griddle heat some butter and cook the pancakes about 2 minutes each side. Use 1/3 cup as a measure for each pancake. NOTE: As you are cooking, the griddle may get too hot and you may need to lower the heat a little bit, and/ or cook the pancakes 2 minutes one side, and only 1 minute the other side.
To make the sriracha mayo, stir together 1/4 cup mayonnaise with 2 Tbsp sriracha.
