Paleo Banana Bread

Banana bread is one of my favorite baked goods, right after lemon cake 🙂

This paleo version is as moist and delicious as the regular one, but has fewer carbs, no refined sugar, and it’s gluten free.

I normally don’t eat any baked goods, since they are high in sugar and carbohydrates. However, when I decide to treat myself and enjoy something moist and fluffy with my afternoon coffee or tea, I always bake it myself.

I use gluten free flours, natural sweetener_ like honey or 100% maple syrup_ and of course, I am not getting any vegetable oil, artificial preservative, colorant, etc.

I also found this a great strategy to consume fewer sweets. Baking is more time consuming than just picking up something already made at the store. It works for me!

Paleo Banana Bread

Ingredients

  • Very ripe bananas, 3 (smashed)
  • Eggs, 2
  • Coconut oil, 1/4 cup (in its liquid state)
  • Orange juice (from real oranges), 1/4 cup
  • Vanilla extract, 1/2 tsp
  • Maple syrup, 1/4 cup
  • Almond flour, 2 cups
  • Cinnamon, 1 tsp
  • Baking powder, 1 tsp
  • Salt, 1/4 tsp

Steps

Pre-heat oven to 365°F.

In a bowl mix the first 6 ingredients.

In another bowl mix the next 4 ingredients.

Incorporate liquid ingredient into dry and mix well.

Pour the batter into a loaf pan lined with parchment paper.

Bake for about 45 minutes or until a tester inserted into the center comes out clean.

Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve.
