BRUSSELS SPROUTS AND CHICKEN GRATIN

I love Brussels Sprouts! This dish combines them with cream, cheese and chicken for a really comforting and delicious meal!

Fall and winter are the perfect time to enjoy casseroles!  They are so easy to make and so good for your palate and your soul 🙂 However, most of recipes out there are full of unhealthy fats and loaded with refined carbs. This dish will give you a healthy option to keep you warm and happy in the cold seasons.

Brussels sprouts are a good source of fiber, manganese, potassium, choline, B vitamins, vitamin K and C. They also contain phytonutrients that have been linked to impressive health benefits including cancer prevention. Furthermore, this amazing cruciferous supports our detox system and provides antioxidant agents.

BRUSSELS SPROUTS AND CHICKEN GRATIN

INGREDIENTS (SERVES 3)
Brussels Sprouts, 12 oz
Pre cooked chicken, 8.5 oz
Onion, 5 oz
Butter, 3 Tbsp
Heavy Cream, 3/4 Cup
Cheddar cheese (grated), 4 oz
Garlic Powder, 1 tsp
Soy Sauce, 2 Tbsps (or coconut aminos)
Paprika and Turmeric, 1/2 tsp each
Salt, ¼ tsp

 

STEPS

Pre-heat the oven to 375 F.

Microwave the Brussels sprouts for 4 minutes (covered with plastic film and not added water).

In a non stick pan melt about 1 1/2 Tbsp of the butter. Add the onions and sauté until soft. Incorporate the Brussels sprouts, chicken, garlic powder, salt, turmeric and paprika. Sauté for a few more minutes.

In the meantime, bring the heavy cream and the remaining butter to a boil. Turn the heat off and immediately incorporate the shredded cheese with a wooden spoon until melted. Add the soy sauce.

Place the chicken and Brussels sprouts in a casserole dish, poor the sauce on top and bake for 15 minutes. Let stand for 10 minutes before serving.
