Butternut Squash with sausage and apples

This dish is really easy to make and super delicious. Great for this fall season!

I found pre-cut frozen butternut squash in 1Lb steamable bags. Just toss the bag in the microwave for 5 minutes and ready to eat. That makes everything so much easier!

I also found at Costco grass-fed sausages. Sausages are processed, so it is important to read the ingredients and look for those with the shortest ingredient list and try to avoid artificial stuff, added sugar and vegetable oils.

Ingredients (serves 2)

Per serving: Protein: 21 gr / Carbs: 43 gr / Fat: 44gr

  • Butternut Squash, 1 Lb (cubed and steamed)
  • Grass-Fed Sausage, 3 (about 9 oz)
  • Green Apples, 2 (skin on and cubed)
  • Coconut Oil, 2 Tbsp
  • Fresh herbs finely chopped, 2 Tbsp (Rosemary, Thyme, Sage)

Steps

Slice the sausage into 1/4 inch thick pieces.

In a big sauté pan heat the coconut oil. Incorporate the sausage and apples. Sauté until sausage is browned.

Add the butter squash and herbs and saute for a few extra minutes. Enjoy!
