This Almond Joy Bars are a quick and delicious treat. Full of healthy fats from the almond meal, shredded coconut and coconut oil.
They are very simple to make, you can make them in about 30 minutes. Make sure to keep them refrigerated until it’s time to eat them. The top layer melts fairly quickly and it’ll get a bit messy 🙂
I made this batch and took them to my friend’s house to eat as dessert. We ate them all, everyone loved them, and my friend asked me for the recipe! So, they were a big success and I am happy to share it with you. Hope you enjoy them!
Paleo Raw Almond Joy Bars
- 1 cup almond meal
- 2 Tbsp raw honey
- 1 Tbsp melted coconut oil
- 1/4 tsp pure vanilla extract
- Pinch of salt
- 1 1/2 cup shredded unsweetened coconut
- 3 Tbsp maple syrup
- 3 Tbsp coconut oil
- 2 Tbsp water
- 1/4 cup 100% cocoa powder
- 1/4 cup melted coconut oil
- 2 Tbsp maple syrup (at room temperature)
Place plastic food wrap on the bottom of a dish of approximately 8 x 6 inches.
Mix the ingredients for the crust, the filling and the topic.
Layer them in the dish. Make sure to press the crust and filling well.
Freeze for 15 minutes, cut them and ready to enjoy!
