These beet chips are crunchy, tasty, and easy to make. They make a great and healthy appetizer or snack, and kids will love them!
Beets are high in Vitamine C, Folate, Potassium and Manganese. They are known to be natural “blood cleansers”. They can help you to detox and cleanse the blood of toxins, heavy metals, and waste due to their compounds called glutathiones, which are essential for detoxification within the liver and other digestive organs.
Beets are abundant in nitrates. Nitrates help widen your blood vessels and circulate more oxygen-rich blood to your heart muscle. Nitrates also relax your veins. Studies have shown that beet juice helps lower blood pressure.
Beets were one of the few foods I didn’t care for growing up. I recently starting to cook with them because I didn’t wanted to miss its health benefits. I am not going to say they are my favorite, but they are a very versatile vegetable that you can juice, puree, incorporate to pastries, eat them raw or cooked. I learned how to cook them and enjoy them and as I always emphasize: variety is the key when it comes to veggies, the more variety you can consume the better!
Beet Chips with Cream Cheese Dip
- Beets, 4 medium
- Olive oil, 2 Tbsp
- Rosemary (dry), to sprinkle
- Cream Cheese (softened), 2 oz
- Salt and pepper, to taste
- Chives (optional)
Preheat oven to 375 degrees F and place oven rack in the center of the oven.
Peel the beets and cut them into thin slices. Try to make them as thin and even as possible, so that they come out more crunchy and cook evenly.
Line a baking pan with aluminum foil. Place the beets in the dish and drizzle with the olive oil. Carefully mix with your hands until they are evenly coated. Replace in the fountain so that it does not top. Sprinkle with a little salt and rosemary.
Bake for 10-15 minutes or until crispy and slightly brown. The cooking time will depend on the thickness and size of the slices. If they came out thick they can be turned over and cooked on the other side the last few minutes.
In the meantime mixed the cream cheese with salt and pepper and chives (if desired) .
Remove from the oven and place on paper napkins until they cool.
