Avocados are one of my favorite foods! They are so versatile, delicious, and good for your health! I think, pretty much everything tastes better with avocado in it 🙂
Avocados are an excellent super-food to add to your diet: high in fiber; vitamin C, K and B6; Folate; Pantothenic Acid; Potassium and Omega-3 fatty acids.
This recipe is really simple to make. The vinaigrette can be put together in minutes using the blender, and the avocados take only 5 minutes to cook. I usually eat the avocados raw, but today I wanted to try something new and have something warm on my salad. I loved it!
Grilled Avocado Salad
Ingredients (Serves 2)
- 2 cups of salad greens
- 2 avocados
- about 1 tsp avocado oil
- 2 tsp pumpkin seeds
- 1/2 tsp coconut sugar
For the vinaigrette
- 1/4 cup avocado oil
- 1/4 cup cilantro
- 1 garlic clove
- Juice of 1/2 lime
- 1/4 tsp chipotle powder
- 1/4 tsp salt
Cut the avocados in half and remove the seeds. Brush lightly with avocado oil and sprinkle with the coconut sugar.
Grill the avocados, flesh side down, for five minutes without moving them. You can use your outdoor grill or an iron grill pan on the stove.
In the meantime, put all the ingredients for the vinaigrette in a blender and blend on high speed until smooth.
Arrange the greens on a plate. With a spoon remove the avocado from the skin and place it on top of the green salad. Drizzle with the vinaigrette and garnish with the pumpkin seeds.
